Fenugreek sprouts are high in protein (23%) and mineral salts (Ca, Fe, Mg, K, Na, P, Z). Because of their capacity to aid digestion, they are often consumed by themselves, as well as with other sprouts. They also take on a different flavor when grown in direct or indirect light, so it is suggested that both ways be tried. Perhaps you'll find your favorite way, or like both for some variety.
